Carrot-Cake Bars
Yield: 12 bars Bake 350°F 25 mins

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 large eggs
  • 1/2 cup firmly packed brown sugar
  • 1/3 cup vegetable oil
  • 2 cups shredded carrots
  • 1 can (8 ounces) crushed pineapple in juice, drained
  • 1 cup whipped cream cheese
  • 2 tablespoons powdered sugar
  • Grated carrots (optional)

Make It

1. Heat oven to 350 degrees F. Grease a 13 x 9-inch baking pan. In medium bowl, combine flour, cinnamon, baking powder, salt, and nutmeg; set aside. In large bowl, whisk together eggs, brown sugar, and oil until well blended, about 1 minute. Stir in carrots, pineapple, and flour mixture until just combined. Spread batter evenly in pan.

2. Bake until top is set and edges pull away from pan, about 25 minutes. Transfer pan to wire rack and cool completely. Cut into 12 bars.

For topping:

3. In small bowl, blend together cream cheese and sugar until creamy. Spoon a dollop of cream-cheese mixture onto each bar, and top with grated carrots, if desired.
