Carousel Cake

Carousel Cake
Servings: 12 Prep 30 mins (not including baking cakes)

Ingredients

  • 2 9-inch-round cake layers, cooled (see Master Recipe for Celebration Cakes, on www.familycircle.com)
  • 1 recipe Vanilla Buttercream (recipe follows)
  • Animal Cookies (recipe on www.familycircle.com)
  • 1 swirl lollipop stick
  • 56 6-inch peppermint sticks
  • Ribbons and flags

Make It

1. Place one cake, flat side up, on plate. Slide waxed paper strips under bottom edges of cake. Spread scant cup frosting over top. Top with second layer, flat side down. Frost cake. Place star cookies around side. Remove waxed paper strips.

2. Insert lollipop into top center of cake. Arrange peppermint sticks evenly around outside of cake. Arrange animal cookies, flags and ribbons.

Vanilla Buttercream

Yield: 3 cups

Ingredients

  • 1 16 ounce box powdered sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/3 cup heavy cream
  • 1 1/2 teaspoons vanilla

Make It

1. Beat together powdered sugar, butter, heavy cream, and vanilla in large bowl until smooth. Keep covered with plastic wrap until ready to use. Makes about 3 cups.
