Make It

1. Heat 2 Tbs. peanut oil in a nonstick skillet on medium-high. Add 1 Tbs. minced ginger and 1 clove minced garlic; cook 30 seconds. Stir in 4 cups riced or crumbled cauliflower. Cook 3 minutes; add 12 oz. shredded cooked chicken breast and 1 cup each sliced snow peas, shredded carrots, and frozen peas. Cook 3 minutes. Move to side of pan; scramble 2 eggs on other side. Combine eggs and cauliflower mixture. Top with 3 Tbs. soy sauce, 1 Tbs. toasted sesame oil, and 2 Tbs. sliced green onions.
