1. Heat oven to 400 degrees F. Coat 2 baking sheets with nonstick cooking spray. Place 4 tortillas on each baking sheet and spray with cooking spray. Bake at 400 degrees F for 10 minutes.
2. In a large bowl, whisk together eggs, corn, 1/4 cup of the cheese, 1/4 cup of the salsa, half of the scallions and salt.
3. Heat a large nonstick skillet over medium-high heat. Coat with cooking spray. Add egg mixture and cook, stirring, until eggs are firm, about 4 to 5 minutes.
4. To serve, place about 1/4 cup of cooked egg mixture on top of each tortilla. Sprinkle each with remaining cheese and scallions. Serve additional salsa on the side. Makes 4 servings.
