Edamame Rice Salad

  • 2 cups cooked and cooled brown rice
  • 1 heaping cup cooked and shelled edamame
  • 3 scallions, thinly sliced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons rice vinegar

Make It

1. In a medium bowl, toss together brown rice, edamame, scallions, and ginger. In another bowl, whisk sesame oil, soy sauce, and rice vinegar. Drizzle the dressing over the salad and toss to coat it evenly.
