1. Preheat the oven to 400 degrees F. Line a baking sheet with foil. Place four medium sweet potatoes on the pan. Bake on a lower rack until tender, about 1 hour. Place a rotisserie chicken in an 8x8 baking pan. Bake on a middle rack for 35 to 40 minutes or until heated through (165 degrees F). Let stand 5 minutes before carving. Serve chicken with baked sweet potatoes and a thawed and heated 10 oz. pkg. frozen peas. Top both the potatoes and peas with butter and sprinkle with salt, if desired.
