1. Combine ice, fresh or frozen strawberries, club soda, mint syrup (recipe follows), mint leaves and lemon juice in a blender. Cover and pulse until ice is crushed and all ingredients are well blended. Divide equally among 4 glasses. Serve chilled.Mint syrup:
2. In a small saucepan, combine 3/4 cup each sugar and water. Bring to boiling over medium-high heat; boil 2 minutes. Cool to room temperature. Stir in 1/2 teaspoon mint extract.
