Ingredients

  • 20 dried apricots
  • 8 ounces Manchego cheese
  • 20 Marcona almonds

Make It

1. Use a paring knife to cut the apricots partially open along the flat side to make a pocket.

2. Cut the Manchego into small pieces, about 1/4-inch thick and 1/2-inch long (small enough to fit the apricots)

3. Stuff each apricot with a piece of the cheese and an almond to serve.
