Double Banana Bread

  • Cooking spray
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1/4 cup butter, softened
  • 2 large eggs, beaten
  • 3 ripe bananas, mashed
  • 1/3 cup low-fat vanilla yogurt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup banana chips, chopped

Make It

1. Preheat the oven to 350 degrees . Spray a 9 X 5-inch loaf pan with cooking spray and set aside.

2. In a medium bowl whisk together the flour, baking soda and salt.

3. In a large bowl combine the sugar and butter with an electric mixer. Beat for 2-3 minutes. Add the eggs, one by one. Slowly mix in the bananas, yogurt, and vanilla. By hand, stir in the flour mixture and the banana chips.

4. Bake for 55-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Allow to cool for 15 minutes before removing from the loaf pan.
