Easy to put together, this moist bread delivers loads of banana flavor.
Preheat the oven to 350°. Spray a 9 X 5-inch loaf pan with cooking spray and set aside.
In a medium bowl whisk together the flour, baking soda and salt.
In a large bowl combine the sugar and butter with an electric mixer. Beat for 2-3 minutes. Add the eggs, one by one. Slowly mix in the bananas, yogurt, and vanilla. By hand, stir in the flour mixture and the banana chips.
Bake for 55-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Allow to cool for 15 minutes before removing from the loaf pan.
