Strawberry Kabobs

  • 1/2 cup orange juice
  • Grated rind and juice of 1 lemon
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground allspice
  • 1 quart strawberries, hulled
  • 2 bananas, peeled and cut into 1-inch pieces
  • 1/2 pineapple, peeled and cut into 1-inch pieces (about 3 cups)
  • Fresh mint, for garnish

Make It

1. Heat broiler. In small saucepan, stir together orange juice, lemon rind and juice, honey, cornstarch and allspice to dissolve cornstarch. Heat, stirring occasionally, over medium until thickened, 2 minutes. Remove from heat.

2. Thread strawberry, banana, strawberry, pineapple and strawberry on each of 6 metal skewers.

3. Coat broiler-pan rack with nonstick cooking spray. Place skewers on broiler-pan rack. Generously brush all sides with cooled glaze.

4. Broil 3 to 4 inches from heat for 2 to 3 minutes per side or until fruit just starts to brown. Garnish with mint. Serve while still warm. Makes 6 servings.
