Mixed Berry Gratin

  • 1 pint strawberries, rinsed, hulled
  • 1/2 pint raspberries, rinsed
  • 1 cup blueberries, rinsed
  • 1 1/3 cups shortbread cookie crumbs (about 20 shortbread cookies)
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup packed dark-brown sugar
  • 1/2 cup heavy cream
  • 1 tablespoon confectioners sugar
  • 1/4 teaspoon vanilla
  • 1/4 cup frozen liquid cholesterol-free egg substitute, thawed

Make It

1. If strawberries are large, cut in half. Place all berries on paper toweling; blot dry. Toss berries together in a bowl.

2. Heat oven to broil.

3. Butter 10-inch-square flameproof dish. Sprinkle cookie crumbs evenly over bottom. Arrange berries over crumbs. Sprinkle with nutmeg, then brown sugar.

4. Beat cream, confectioners sugar and vanilla in bowl until soft peaks form. Gently fold in egg substitute.

5. Broil berries 8 inches from source of heat 6 minutes, until slightly softened. Remove from oven. Scrape egg mixture over berries. Place oven rack 4 inches from heat. Broil until lightly golden, 1 to 2 minutes. Serve. Note: Broiling time will vary depending on ripeness of berries. Makes 6 servings.
