Ingredients

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1/2 cup confectioners sugar
  • Pinch salt
  • 2 cups all-purpose flour
Filling:

  • 2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 eggs
  • 6 tablespoons fresh lemon juice

Make It

1. Line 13 x 9 x 2-inch baking pan with foil; coat with cooking spray.

Crust:

2. Blend butter, sugar and salt in bowl until smooth. Stir in flour. Scrape into pan, pressing level.

3. Bake in 350 degree F oven for 20 minutes or until golden.

Filling:

4. Beat sugar, flour, eggs and lemon juice in bowl until smooth. Pour over crust.

5. Bake in 350 degree F oven 25 minutes, until no imprint remains when lightly touched in center. Cool on rack. Remove from pan. Cut into squares. Dust with confectioners sugar. Makes 24 bars.
