Easy-as-Pie Baked Apples

  • 4 firm, ripe apples (Rome Beauty, Granny Smith, Golden Delicious)
  • 1 cup apple juice
  • 1/2 cup water
  • 1/2 cup raisins
  • 1 tablespoon lemon juice or orange juice
  • Cinnamon to taste
  • 1/2 cup low-fat yogurt (optional)
  • 2 tablespoons chopped nuts (optional)

Make It

1. Heat oven to 350 degree F.

2. Peel the top third of apples and core. Set in baking dish.

3. In a small saucepan, combine apple juice, water, raisins, and lemon juice. Bring to a boil and cook for 2 to 3 minutes. Pour 3/4 of juice mixture over apples and sprinkle with cinnamon.

4. Cover with foil and bake for 30 minutes. Remove foil, spoon the rest of the juice mixture over apples and bake an additional 25 to 30 minutes.
