Set aside 1/2 cup of the chopped strawberries. In a medium-size heavy-bottom saucepan, stir together the remaining strawberries (about 3-1/2 cups), the sugar and ginger. Bring to a simmer. Continue to cook for 5 minutes, stirring occasionally. Remove from heat and mash berries, until crushed, with the back of a wooden spoon.
Stir in the vanilla extract and reserved strawberries. Allow to cool completely.
Serve as a topping for ice cream or waffles (see Note).
