Chunky Gingered Strawberry Sauce

  • 1 quart strawberries (about 4 cups), hulled and chopped
  • 1/2 cup sugar
  • 1 tablespoon candied ginger, chopped
  • 1/2 teaspoon vanilla extract

Make It

1. Set aside 1/2 cup of the chopped strawberries. In a medium-size heavy-bottom saucepan, stir together the remaining strawberries (about 3-1/2 cups), the sugar and ginger. Bring to a simmer. Continue to cook for 5 minutes, stirring occasionally. Remove from heat and mash berries, until crushed, with the back of a wooden spoon.

2. Stir in the vanilla extract and reserved strawberries. Allow to cool completely.

3. Serve as a topping for ice cream or waffles (see Note).
