Blueberry Cobbler

  • Filling:
  • 1 pint blueberries (about 2-1/2 cups)
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • Topping:
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons unsalted butter, cut into pieces
  • 1/2 cup milk
  • 1 large egg
  • 1/2 teaspoon ground cinnamon

Make It

1. Preheat oven to 375 degrees F. Coat 1-quart baking dish with cooking spray.

Prepare Filling:

2. Combine berries, sugar, lemon juice and cornstarch in bowl. Spoon into prepared dish.

Prepare Topping:

3. Stir together flour, 2 tablespoons sugar, baking powder and salt in bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse meal. Whisk together milk and egg. Stir into flour mixture until just blended; do not over mix. Drop batter by tablespoonfuls over blueberry mixture. Mix together cinnamon and remaining 2 tablespoons sugar in small bowl; sprinkle over cobbler.

4. Bake in preheated 375 degrees F oven for 40 minutes until top is golden brown. Serve warm with a scoop of ice cream or a dollop of whipped cream if you wish.
