Apricot Kuchen
Servings: 8 Bake 350°F 40 mins to 50 mins


  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 2 cups sliced peeled apricots (about 4) or sliced unpeeled plums (about 4)
  • 1/4 cup coarsely chopped pecans (optional)
  • 1 tablespoon sugar
  • 1/4 tablespoon ground cinnamon

Make It

1. Position rack in lower third of oven. Heat oven to 350 degrees F. Grease 9 x 2-inch round baking pan. In a medium-size bowl whisk together all-purpose flour, baking powder and salt.

2. In large bowl, with electric mixer on medium to high speed, beat unsalted butter and sugar until light and fluffy, for 3 to 4 minutes. Beat in eggs one at a time until blended, beating well after each addition.

3. Stir in flour mixture just until incorporated. Scrape batter into prepared pan and spread evenly. Scatter on top; sliced peeled apricots or sliced unpeeled plums and pecans if desired. Combine sugar and cinnamon and sprinkle over fruit.

4. Bake until topping is golden brown and wooden pick inserted in center of cake (avoiding fruit) comes out clean, 40 to 50 minutes. Let cool to room temperature before serving.
