If baseball is the theme of your child's birthday party, make this fun dessert. It uses a cake mix so the only hard part is the decorating. (And that's really the fun part!)
Heat oven to 350°F. Prepare cake mix according to package directions. Spoon batter into a foil baking cup for baseball cupcake. Divide remaining batter between two 8-inch cake pans. Bake cupcake on a baking sheet, testing after 18 minutes. Continue baking cakes as directed. Cool cakes 10 minutes, turn onto rack, and let cool completely.
Layer round cakes with caramel frosting between them; frost entire cake with caramel frosting. Frost cupcake with vanilla frosting. Place remaining vanilla frosting in a freezer-weight zip-top bag and cut off a very small corner.
Decorate cakes with vanilla frosting, and use chocolate and red decorating icings to make baseball and mitt.
