  • 5 Belgian endives, thinly sliced
  • 1 medium apple, cut into matchsticks
  • 1/4 small red onion, diced
  • 1/4 cup 2% plain Greek yogurt
  • 1/4 cup orange juice
  • 1 tablespoon cider vinegar
  • Salt and pepper
  • 1/3 cup chopped cashews

Make It

1. In a medium bowl, toss together endives, apple, and red onion. In another bowl, whisk together Greek yogurt, orange juice, and cider vinegar. Drizzle the dressing over the salad and toss to coat evenly. Season with salt and pepper. Scatter on cashews before serving.
