Preheat the oven to 350 degrees F. Line a 9 x 13 inch baking pan with parchment paper. Set aside.
On a large sheet pan with sides combine the oats, coconut, walnuts, wheat germ and flax seeds. Bake for 12-14 minutes, stirring occasionally, until lightly browned. Reduce the oven temperature to 300 degrees.
Heat the coconut oil in a small saucepan until smooth and liquid. Add the honey and stir to combine. Remove from the heat and stir in the vanilla, cinnamon and salt. Pour the coconut oil mixture over the oatmeal. Add the dried fruit and stir, making sure everything is well coated. Press the mixture into your prepared baking pan and pack it down as evenly as possible.
Bake for 25 to 30 minutes, until light golden brown. Allow to cool for at least 3 hours before cutting into bars.
