Prepare classic sugar cookie dough with these changes: Add ginger, cocoa powder, cinnamon and white pepper to flour mixture. Roll half of dough 1/4 inch thick. Cut shapes with 3-inch cutter. Repeat with second half of dough. Gather scraps; refrigerate as directed. Re-roll; cut out a total of 24 cookies. Place on ungreased baking sheets; bake at 350 degree F for 12 minutes. Cool on wire rack.
Blend confectioners sugar, lemon juice and vanilla extract until good piping consistency; add 1/2 teaspoon water if needed. Outline cooled cookies. Attach candies, if desired. Makes 2 dozen cookies.
