1. Prepare Butter Scotch Dough (from Butterscotch Sandwiches on www.familycircle.com) with these changes: Add unsweetened cocoa powder to flour mixture.
2. In small bowl, dissolve coffee granules in warm water. Add to butter mixture.
3. Coat baking sheets with nonstick spray. Spread oats on waxed paper. Roll 1 tablespoon dough into ball; roll in oats. Place on baking sheet. Repeat process, spacing balls 1 inch apart.
4. Bake in 350 degree F oven 13 to 14 minutes, until firm and slightly cracked on top. Transfer to racks to cool. Store airtight at room temperature 1 week. Makes about 3-1/4 dozen cookies.
