Itsy-Bitsy Ice-Cream Sandwiches

Ingredients

  • 12 cookies, 1 to 1-1/2 inches in diameter
  • 1/4 cup vanilla ice cream or flavor of choice (see note)

Make It

1. Top half the cookies with about 1 teaspoon ice cream. Sandwich with remaining halves. Refrigerate 30 minutes, or until ice cream is firm.

Note

  • Some great flavor combos are peanut butter cookies with vanilla ice cream, chocolate cookies with mint ice cream, and vanilla cookies with chocolate-fudge ice cream.
