Cocoa Bites


  • 2 cups whole pitted dates (about 10 ounces)
  • 1 cup unsweetened shredded coconut, plus more for rolling
  • 1 cup whole almonds
  • 1/4 cup plus 2 tablespoons unsweetened cocoa powder
  • Finely chopped nuts for rolling

Make It

1. In a food processor, process dates, coconut, almonds and cocoa powder until the nuts are finely chopped. Add the water and pulse until the mixture forms a rough paste.

2. With moistened hands, shape heaping teaspoons into balls, then roll them in chopped nuts or coconut to coat. They'll keep refrigerated for up to a week.
