Line a cookie sheet with parchment paper. Combine nuts in a small bowl. Use a tablespoon to scoop nuts from the bowl and place in small, separate piles on the prepped cookie sheet.
Place caramels in a microwave-safe bowl. If they are very stiff, add a tablespoon of water to help soften them. Microwave for 20 seconds and stir. Continue to microwave in 10-second intervals until completely melted. Stir until smooth, then spoon caramel on top of each nut cluster.
Place chocolate in another microwave-safe bowl. Heat on half-power for 30 seconds. stir thoroughly and continue to microwave in 10-second intervals until completely melted. Stir until smooth. Spoon chocolate on top of caramel and nuts, covering the entire cluster.
Place cookie sheet in the freezer for at least 30 minutes, until the chocolate hardens. Place in cellophane bags and tie closed with a tag. We went with "Nuts 4 U."
Replace the pecans and cashews with pretzel bites, pumpkin seeds, or popcorn for a nut-free treat.
