Sesame Noodles With Chicken

  • 1 clove garlic
  • 1 cup cilantro leaves
  • 3 tablespoons fresh lime juice
  • 1 tablespoon dark Asian sesame oil
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon hot-pepper sauce
  • 1/2 cup smooth peanut butter
  • 1 whole boneless, skinned chicken breast (about 8 ounces), cut into thin strips
  • 8 ounces soba noodles
  • 1/4 cup boiling water
  • 2 green onions, sliced thinly on the diagonal

Make It

1. Bring large pot of water to boiling. Cook garlic in water for 1 minute. With slotted spoon, remove garlic from water; keep water boiling.

2. Press blanched garlic through garlic press (or chop) into food processor or blender. Add cilantro leaves. Whirl to chop finely. Add lime juice, sesame oil, soy sauce, pepper sauce and peanut butter. Whirl until consistency of sauce. Thin sauce with 1/4 cup of the boiling water, or as needed.

3. Place strips of chicken and noodles in boiling water; cook 2 to 3 minutes or until chicken is cooked through and noodles are tender. Drain; toss chicken and noodles with sesame sauce in serving bowl. Garnish with green onions. Serve immediately. Makes 4 servings.
