Salsa-Style Drumsticks

Ingredients

  • 1 onion, halved and thinly sliced
  • Juice of 2 limes
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon liquid hot-pepper sauce
  • 1 14 ounce can stewed tomatoes
  • 1 jalapeno pepper, seeded and diced
  • 8 chicken drumsticks (2-1/2 pounds)
  • 1 10 ounce package yellow rice
  • 1 1/4 cups water

Make It

1. Mix onion, juice, oil, sauce, tomatoes, jalapeno and drumsticks in plastic bag. Refrigerate 4 hours or overnight.

2. Heat broiler.

3. Remove drumsticks from marinade; reserve marinade. Place chicken in single layer, skin side up, on broiler rack.

4. Broil 4 to 6 inches from heat for 15 to 20 minutes, turning once.

5. Fix rice following package directions.

6. Transfer marinade to small skillet. Add water. Bring to boiling. Lower heat; simmer 25 to 30 minutes, until onion is tender. Serve with rice and chicken.
