Mediterranean Chicken and Orzo

Chicken, feta cheese and kalamata olives are tossed with a mustard and herb dressing to create this main dish salad with Mediterranean flavors.

Mediterranean Chicken and Orzo

  • 1 tablespoon Dijon mustard
  • 1/4 cup red-wine vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup extra virgin olive oil
  • 1/2 teaspoon dried Italian seasoning
  • 4 extra-large sweet red peppers, halved lengthwise, cored and seeded
  • 1 pound orzo
  • 1 cup grape tomatoes, halved
  • 1/2 cup pitted kalamata olives, coarsely chopped
  • 1/4 pound feta cheese, crumbled
  • 2 5 ounce packages precooked Italian-flavored chicken, chopped
  • Fresh herbs, to garnish (optional)

Make It


1. Whisk together mustard, vinegar, salt and black pepper in a small bowl. Add olive oil in a thin stream, whisking constantly. Whisk in Italian seasoning. Cover and refrigerate.


2. Place peppers in microwave-safe dish. Add cold water to depth of 1/8 inch (cook in batches, if necessary). Cover dish tightly with plastic wrap. Microwave 6 minutes or until peppers have softened slightly. Remove from dish; cool. Pat dry.

3. Cook orzo according to package directions, about 10 minutes. Combine with tomatoes, olives, feta and chicken in a large bowl. Pour 3/4 cup of the dressing over top and gently stir until evenly coated. Drizzle with remaining dressing.

4. To serve, fill each pepper-half with about 1-1/3 cups of the orzo filling. Garnish with fresh herbs, if desired.
