Grilled Chicken with Tomato-Pesto

Ingredients

  • 4 boneless, skinned chicken breast halves, trimmed (about 1-1/4 pounds)
  • 2 teaspoons extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Tomato-Pesto (recipe follows)

Make It

1. Heat broiler or prepare grill.

2. Rub chicken breasts with olive oil, salt and pepper.

3. Broil or grill chicken 4 inches from heat, turning frequently, for 6 to 7 minutes per side or until no longer pink in center. Serve with Tomato-Pesto.

Tomato-Pesto

Ingredients

  • 1/4 cup pesto
  • 1/4 cup orange juice
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 ripe tomatoes, cored and diced

Make It

1. Combine pesto, orange juice, balsamic vinegar, salt, pepper and tomatoes, cored and diced, in small bowl; toss to mix well. Refrigerate covered, at least 1 hour.
