Easy Cassoulet

Here's a hearty French dish recipe made incredibly simple with canned beans, turkey kielbasa, and roasted chicken meat. Serve with crusty bread for a quick and tasty dinner.

Easy Cassoulet

  • 1 1/2 cups peeled and sliced carrots
  • 1 stalk celery, diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cans (15 ounces each) white beans, rinsed and drained
  • 1 can (14 ounces) reduced-sodium chicken broth
  • 1/2 pound turkey kielbasa, sliced
  • 1 whole roasted chicken, cut into pieces

Make It

1. Place carrots and celery in bowl; cover and microwave 3 minutes until just tender. In skillet, heat oil over high heat. Add garlic and cook 30 seconds. Stir in carrots and celery, white beans, chicken broth, and turkey kielbasa. Bring to a boil, reduce heat, and simmer 8 minutes. Add chicken pieces and cook 3 minutes more, until heated through.
