Chicken With Garden Fresh Pasta

  • 3 tablespoons olive oil, divided
  • 4 cups diced tomatoes
  • 2 cups thinly sliced zucchini
  • 3 garlic cloves, minced or pressed
  • 2 cups chopped fresh basil
  • Entire chicken breast, skin and bone removed, diced
  • 1 9 ounce package fresh angel-hair pasta, such as Buitoni
  • 1 ounce grated Parmesan cheese

Make It

1. In a large saucepan, add 1 Tbs. olive oil to enough water to cook pasta. Heat to boiling. Meanwhile, in a large, deep skillet, warm remaining olive oil over medium heat. Stir in tomatoes, zucchini, garlic, and basil. Saute vegetables, stirring often, about five minutes. Stir in chicken and continue stirring until heated through.

2. Add pasta to boiling water, reduce heat to medium, and cook one minute. Drain pasta and divide among individual pasta bowls. Top with chicken mixture. Sprinkle with Parmesan cheese.
