Chicken Waldorf Salad

Ingredients

  • 2 cooked chicken breasts, bone and skin removed (about 5 ounce)
  • 2 cooked chicken legs (thighs and drumsticks), bone and skin removed (about 5 ounce)
  • 1/4 cup light mayonnaise
  • 1 1/2 cups juice-packed crushed pineapple, well drained
  • 1/2 cup diced celery
  • 1 cup bagged shredded carrots
  • 4 ounces reduced-fat cheddar cheese, such as Cabot, cubed or shredded
  • 1/2 teaspoon garlic powder
  • Freshly ground pepper to taste
  • 1 tablespoon lemon juice
  • 1 cup bagged mixed salad greens

Make It

1. Dice cooked chicken and place in a bowl. Add remaining ingredients except salad greens. Stir well. Divide salad greens among individual plates. Top with chicken mixture.
