Chicken Salad

Ingredients

  • 2 cups cooked chicken (about 8 ounces), cut into small cubes
  • 2 celery ribs, diced (about 1 cup)
  • 2 hard-cooked eggs, chopped
  • 1/4 cup chopped onion
  • 1/2 teaspoon salt
  • 3 sweet pickles, chopped (3/4 cup)
  • 1/8 teaspoon poultry seasoning
  • 1 cup reduced-fat mayonnaise

Make It

1. Mix all ingredients together in a bowl. Cover; refrigerate for at least 2 hours. Serve as sandwich filling, on crackers or on salad greens.
