Chicken Salad with Bacon

  • 8 ounces fully cooked chicken breast meat, chopped or 2 cans (4.5 ounces each) chicken in water, drained
  • 3 tablespoons light mayonnaise
  • 2 tablespoons finely diced red onion
  • 1 celery rib, chopped
  • 3 slices fully cooked bacon, crumbled (or 1/4 cup bacon bits)
  • 1 tablespoon Dijon mustard
  • Arugula leaves or leaf lettuce
  • Sliced whole wheat bread

Make It

1. In a medium-size bowl, combine chicken, mayonnaise, onion, celery, bacon and mustard. Mix well. Make a sandwich with 1/2 cup chicken salad, arugula leaves and whole wheat bread, or place chicken salad over lettuce leaves and serve.
