Chicken Or Turkey Chili Pepper Casserole

  • 1 recipe Creamed Chicken or Turkey
  • 1 - 2 4 1/2 ounce can chopped mild green chili peppers, drained
  • 1/4 teaspoon ground cumin
  • 4 ounces tortilla chips, crushed (2 to 3 cups)
  • 2 cups (8 ounces) lightly packed shredded Cheddar cheese

Make It

1. Position a rack in the center of the oven. Preheat oven to 400 degrees F. Butter a 13 x 9-inch baking pan or other shallow baking dish.

2. Prepare Creamed Chicken or Turkey (recipe follows).

3. Stir in chili peppers and cumin.

4. In the prepared pan, layer the Creamed Chicken or Turkey alternately with tortilla chips and Cheddar cheese. Top with final layer of tortilla chips, and sprinkle with cheese.

5. Bake in 400 degrees F oven until the sauce is bubbly and the cheese is golden brown, 25 to 35 minutes.

Creamed Chicken or Turkey


  • 4 tablespoons (1/2 stick) unsalted butter
  • 1/2 cup all-purpose flour
  • 1 3/4 cups chicken stock
  • 1 3/4 cups whole milk, half-and-half or light cream
  • 4 cups diced or shredded cooked chicken or turkey
  • 2 - 3 tablespoons sherry (optional)
  • Lemon juice
  • Salt and black or white pepper
  • Pinch freshly ground nutmeg

Make It

1. Melt butter in a large saucepan over medium-low heat. Add flour and whisk until smooth.

2. Cook, whisking constantly, for 1 minute. Remove the pan from heat. Add chicken stock and whole milk, whisking until smooth.

3. Increase the heat to medium and bring the mixture just to a simmer, whisking constantly. Remove the pan from the heat; scrape the corners and sides of the saucepan with a wooden spoon or heatproof rubber spatula, and whisk hard to break up any lumps. Return the pan to the heat and, whisking, bring to a simmer and cook for 1 minute.

4. Stir in chicken or turkey and sherry (optional). Cook for 1 minute longer. Remove from the heat and season to taste with lemon juice, salt, pepper and nutmeg.
