Chicken Nicoise & Orzo

Ingredients

  • 1 jar (6 1/2 ounces) drained marinated artichokes
  • 1 can (14 1/2 ounces) Italian seasoned diced tomatoes
  • 1/4 cup sliced black olives
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon black pepper
  • 3 cups cooked, diced chicken
  • Orzo
  • Parmesan cheese

Make It

1. In a large skillet, combine marinated artichokes, diced tomatoes, sliced black olives, balsamic vinegar and pepper. Simmer for 5 minutes.

2. Stir in chicken and heat through. Serve over cooked orzo and garnish with shredded Parmesan cheese.
