Chicken Monterey

Ingredients

  • 4 boneless, skinless chicken breast halves (1-1/2 pounds total)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup bottled barbecue sauce
  • 8 slices cooked bacon
  • 1 cup shredded cheddar cheese
  • 4 scallions, trimmed and sliced (or chopped)
  • 1 small tomato, chopped

Make It

1. Heat oven to 350 degrees F.

2. Coat 3-quart baking dish with cooking spray. Place chicken in dish. Add salt, pepper. Spoon on sauce.

3. Bake in 350 degrees F oven 20 minutes, until internal temperature registers 160 degrees F.

4. Top each breast with 2 slices cooked bacon. Sprinkle with cheddar.

5. Bake in 350 degrees F oven 5 minutes. Top with scallion and tomato.
