  • Heat oven to 375°. Coat a large shallow roasting pan with nonstick cooking spray.

  • In a large bowl, combine bread crumbs and milk. Add ground chicken, mushrooms, onions, eggs, parsley, meatloaf seasoning, lemon zest and salt. Mix thoroughly; form into 2 meatloaves.

  • Place meatloaves in prepared pan and bake at 375° for 55 minutes or until internal temperature reaches 180°. Serve 1 meatloaf with whipped potatoes, roasted butternut squash and, if desired, seasoned stewed tomatoes. Cool remaining meatloaf, wrap in plastic and refrigerate for gyros on Wednesday.
