1. In a large bowl, stir together rolled oats, chia seeds, dark chocolate, raw pepitas, and dried tart cherries. In a small bowl, stir together peanut butter, honey, vanilla, and salt. Combine the two mixtures and stir until evenly blended.
2. Cover a baking sheet with parchment paper. Use a 2-inch cookie cutter to shape each bite directly on the baking sheet by packing the mixture firmly into the cutter, then removing the cutter. Place the bites in the refrigerator to firm for at least two hours. Store them in the refrigerator in an air-tight container.
