Cheesy Garlic Chickpeas

  • Cooking spray
  • 15 ounce can chickpeas, drained and blotted dry
  • 1 tablespoon butter, melted
  • 1/8 teaspoon pepper
  • 1/2 cup freshly grated Parmesan
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder

Make It

1. Heat the oven to 350 degrees . Line a rimmed baking sheet with foil and coat it with cooking spray.

2. In a medium bowl, toss the chickpeas with melted butter until evenly coated. Add pepper, Parmesan, kosher salt and garlic powder, then toss well.

3. Evenly spread the chickpeas on the prepared sheet. Roast until brown and crunchy, about 35 minutes, turning the pan halfway through.
