1. Starting with 4 slices whole wheat bread, brush one side of each bread slice with olive oil. Heat medium-size skillet over medium. Add a slice of bread, oil-side down, and top with 1/4 cup shredded fresh mozzarella cheese and 2 tsp. chopped fresh basil. Then top with another slice of bread, oil-side up. Cook until golden, about 2 minutes, then turn to cook other side. Repeat steps to make a second sandwich. Slice each sandwich into sticks. Serve with marinara sauce for dipping. Makes 2 servings.
