Spiced Coffee Cake

Ingredients

  • 1 cup dried fruit bits
  • 1 cup coarsely chopped shelled pistachio nuts
  • 2 1/2 cups cake flour (not self-rising)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 1 cup (2 sticks) butter or margarine, at room temperature
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla

Make It

1. Heat oven to 350 degrees F. Lightly coat 13 x 9 x 2-inch baking pan with cooking spray. Mix bits, nuts in bowl.

2. Mix cake flour, baking powder, cinnamon, baking soda, nutmeg, salt and cloves in medium-size bowl.

3. Beat butter, sugar in bowl until light and fluffy. Beat in eggs, one at a time. Beat in sour cream and vanilla. On low speed, gradually add flour mixture in small batches. Spread half the batter in prepared pan. Sprinkle with 1 cup fruit-nut mixture. Spoon remaining batter on top, carefully spreading to keep fruit in single layer. Top with remaining cup fruit mixture.

4. Bake in 350 degrees F oven 30 to 35 minutes or until toothpick inserted in center comes clean. Let cake cool in pan on wire rack.
