Master Cake Recipe
Yield: one 13 x 9 x 2-inch cake; two 8-inch round or two 9-inch round cakes; two 6 1/2-cup ring cakes; or one 10 x 2-inch round cake or springform cake

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 2/3 cups granulated sugar
  • 3 eggs, at room temperature
  • 1 teaspoon vanilla
  • 1 1/2 cups milk

Make It

1. Heat oven to 350 degrees F. Grease cake pan(s) chosen for desired number of cake(s). Stir flour, baking powder and salt in bowl.

2. Beat butter and sugar in large bowl until pale and fluffy, about 5 minutes, scraping down side with rubber spatula as needed. Beat in eggs, one at a time, until blended. Beat in vanilla. Alternately stir in flour mixture and milk, beginning and ending with flour mixture, just until mixed. Pour batter into pan(s).

3. Bake in 350 degree F oven according to baking times listed at right. Cool cake(s) in pan(s) on rack 5 minutes. Remove cake(s) from pan(s) to cool.
