Carrot-Banana Mini Bundts

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 stick unsalted butter at room temperature
  • 3/4 cup sugar
  • 2 large eggs
  • 1 cup grated carrots
  • 3/4 cup mashed ripe bananas
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons vanilla
  • Powdered sugar

Make It

1. Heat oven to 350 degrees F. Butter and flour 6 mini bundt pans. Combine flour, baking soda, baking powder, and salt. In large bowl, beat butter and sugar until fluffy. Beat in eggs, one at a time. Beat in carrots, mashed ripe bananas, lemon juice, and vanilla. Beat in flour mixture. Spoon batter into prepared pans. Bake 35 to 40 minutes, or until golden-brown. Cool 5 minutes. Turn bundts out onto rack; cool completely. Sprinkle with powdered sugar.
