Basic White Cake
Yield: two 9 x 2-inch rounds Prep 20 mins Bake 325°F 30 mins


  • 4 cups sifted cake flour
  • 3 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/4 cups (2-1/2 sticks) unsalted butter or margarine, at room temperature
  • 1 2/3 cups sugar
  • 6 egg whites
  • 2 teaspoons vanilla
  • 1 cup water

Make It

1. Heat oven to 325 degrees F. Grease pans; line bottoms with waxed paper; grease paper; dust pans with flour.

2. Mix flour, baking powder and salt on waxed paper.

3. With mixer on medium, beat butter and sugar in bowl until light and fluffy. Add whites, one at a time, beating after each. Beat in vanilla.

4. On low, beat flour mixture alternately with water into butter mixture, beating after each addition. Pour batter into prepared pans.

Bake in 325 degrees F oven:

5. 35 minutes, for 9-inch rounds; 30 minutes for 9-inch squares; 45 minutes for hearts; 55 minutes for 10-inch round, or until wooden pick inserted in center comes out clean.

6. Cool pans on rack 10 minutes. Remove cakes to cool.
