  • In a small bowl combine the brown sugar, paprika, cumin, black pepper, salt and cayenne. Mix well and set aside.

  • Preheat a grill or grill pan to medium-high. Dry the pork chops with paper towels. Generously coat the rub all over the chops, being sure to dredge the edges as well. The chops should look thoroughly covered. Put the remaining rub in an airtight container and save it for future use.

  • Place the chops on the grill or grill pan and cook for about 3 to 5 minutes each side, or until done (145°F to 160°F); the meat should be barely pink when tested with a sharp knife. Let rest for 3 to 4 minutes and serve.
