  • In a small food processor, pulse the cream cheese until smooth. Add the strawberries and pulse until smooth. (Or mash strawberries and cream cheese together using a potato masher, until strawberries are incorporated into the cream cheese.) Add the maple syrup, if desired. Refrigerate for at least 20 minutes, or store in an airtight container for up to 2 days.

  • Slice the bagels in half through the equator. Cut each half in half, so you have 8 quarters. Spread bagels with strawberry cream cheese and place two halves together, rounded sides facing toward each other. Top with sliced strawberries, star fruit, and grapes as shown, if desired. Cut small pieces of pretzel sticks and place for antennae.

  • Make the apple butterflies. Core one apple and cut in half lengthwise, then slice into 1/2-in.-thick slices. Set aside 8 of the largest apple pieces. Place the smaller slices between each butterfly bagel half to form the body.

  • Spread each large piece of apple with 1 tsp. peanut butter. Top with sprinkles, if desired. Cut small pieces of pretzel sticks and place for antennae; use one long one for the body. Hull and slice a strawberry and place slices on butterfly wings.

Keeping It Fresh

If it's convenient, pick up bagels from a local bakery. Not only will they be delicious, they'll also be made right on the premises, reducing their carbon footprint. Buy in bulk, slice, and freeze any extras on the same day.
