Makes: 9 biscuits. Prep: 10 minutes. microwave: 3 minutes. Bake: at 425 degrees for 10 to 12 minutes
1. Drizzle whole head of garlic with olive oil, and rub some into papery skin. Place in a microwave-safe dish and cover with plastic wrap. Microwave on high for 3 minutes. Let stand, covered, for 5 minutes to soften.
2. Meanwhile, combine biscuit mix, minced onion and pepper in a large bowl.
3. Uncover garlic and slice off top. Squeeze cloves from skin. Chop with thyme leaves, then whisk into dry ingredients in bowl. Stir in milk and drop batter in 1/2-cupfuls onto an ungreased baking sheet for a total of 9 biscuits.
4. Bake biscuits at 425 degrees F for 10 to 12 minutes or until puffed and lightly browned. Remove to wire rack and cool slightly before serving.
