  • Cook pasta, about 7 minutes (pasta will be just shy of al dente), in a large pot of salted boiling water. Reserve 2/3 cup pasta water, then drain.

  • While pasta is cooking, cook bacon over medium heat in an extra-large skillet until crisp. Transfer to a stack of paper towels to drain. Chop the bacon.

  • Drain all but 1 tablespoon bacon fat from the pan and set over medium heat. Saute red onion until tender, 5 minutes. Add garlic and cherry tomatoes and saute to soften, 2 minutes. Add the pasta, pasta water, Parmesan, salt, and fresh black pepper Stir until the cheese melts. Add arugula, and stir to wilt. Serve with Parmesan to pass at the table.
