- 1/2 cup whipping cream
- 1 tablespoon sugar
- 2 teaspoons finely shredded lemon zest
- 12 purchased pizzelle (Italian waffle) cookies
- 1 cup fresh raspberries
1. Combine the cream, sugar and lemon zest in a large bowl. Using an electric mixer with the whisk attachment or a large whisk, whip the cream until it forms stiff peaks, about 1 minute.
2. Set 6 of the pizzelle cookies on a large platter. Divide the lemon whipped cream among them. Sprinkle the berries over the cream, then top with the remaining cookies.
