STEAK TORTILLA ROLL-UPS

Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon red-wine vinegar
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1 flank steak (2 pounds)
  • 8 large flour tortillas
  • Salsa (recipe follows)

Make It

1. Combine oil, vinegar, oregano, chili powder and cumin in heavy resealable plastic bag. Place steak in bag; press out air; seal. Refrigerate overnight.

2. Broil steak 6 inches from heat 4 to 5 minutes per side or until desired doneness. Let stand for 5 minutes. Thinly slice diagonally across grain.

3. Heat tortillas according to package directions. Spoon 1-1/2 tablespoons salsa over each. Top with sliced meat. Roll up; serve. Makes 8 servings.

Salsa

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 can (16 ounces) salsa-style pasta-ready tomatoes
  • 1 can (4 ounces) chopped chilies
  • 1/3 cup chopped pimiento-stuffed olives
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon black pepper

Make It

1. Heat olive oil in saucepan over medium heat. Add onion; saute until softened, about 5 minutes. Add tomatoes, chilies, olives, oregano, chili powder, cumin powder, and black pepper; cook for 10 minutes. Cover and refrigerate.
